ZUCCHINI EXTRAVAGANZA!!!!!!!!!

Here is what I started with:

There was also an unpictured loaf.

Now, before I give the recipe, I want to say I would add more sugar if I made these in the future.  The muffins are spicy, but not very sweet.  If I would have had a can of pineapple I would have added it for sure.  I only used about 1/2 a cup of sugar, but in the future would use 1 total cup or add something such as canned pineapple or even a banana.

Also note, I used medium eggs as that is what I had.

Each muffin has 102 calories, 2.8 grams of fat, 130.6 potassium and 52% of your daily vitamin A needs! WOW! For one muffin…nutritional powerhouse!

Courtney’s Zucchini Pumpkin Muffin Extravaganza

4 egg whites

2 whole eggs

1/4 cup vegetable oil

1/4 cup fat free Fage (greek yogurt)

1/2 cup sugar (please see notes above)

2 cups flour

pinch of salt

1 tsp baking soda

1 tsp baking powder

1.5 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ground cloves

1/2 cup raisins

2.5 cups shredded zucchini

1 can pumpkin (NOT PUMPKIN PIE FILLING)

 

Mix the eggs,  oil, yogurt and sugar with an electric beater until mixed.

Mix all the dry ingredients together in a bowl and the add to the egg mixture and mix well.

Add pumpkin, zucchini and raisins to bowl and mix until all blended.  Cook at 350 degrees until fork comes out clean, the muffins took about 40 minutes and the loaf 60 minutes.

Here was the zucchini in the food processor…what a huge pile of shreds I got!

I made 12 muffins and 1 loaf.  It ended up to be very dense, but moist.

    Hello to Rita—assuming that’s Arizona Rita! Iced coffee in August in coolish Wisconsin is my fav beverage….it’s about 70 degrees and rainy today. Hurrah for midwestern summers!

    To Courtney blog and fitness fans, she was an avid baker and was always comfortable in the kitchen as a child. An Arizona Aunt is responding to her yummy recipes…..how about an Arnold Palmer Iced Tea about now at all the office break tables in America!
