Recipe BONANZA!!! (Courtney’s World Famous Pasta Salad and Fatty Fat Sausage Alfredo Casserole)

Ok, word of warning, neither of these recipes is particularly healthy nor will they aid you in any weight loss efforts you may be working on.  However, these recipes are tasty every once in a while as a treat or for a special event.

I present: Courtney’s World Famous Pasta Salad and Fatty Fat Sausage Alfredo Casserole (yes, that is the official name I’ve given it)

Courtney’s world famous pasta salad was developed a few years ago and now goes with me to BBQ’s, our annual canoe trip, family partys, etc. I used to cut up red and green pepper for some color and nutrients, but my core audience for pasta salad (boys) asked me kindly to stop interfering with their pasta salad enjoyment and remove the veggies.  So, feel free to add any and all veggies to this pasta salad.  I made it today for a BBQ we are going to on Saturday because it tastes better having a few days to “marinate”

1.5 bags of cheese tortellini

cheese

pepperoni

italian dressing

That’s it.  That’s all the ingredients!

Only used HALF this mongo block of cheese and 3/4 bag of the pepperoni...use whatever cheese you want, pepper jack is good too!

Boil 1.5 bags of tortellini, when they float shut off the stove and put in a colander.  Run cold water ove r the torts.

While the pasta is boiling, cube up the cheese and quarter up the pepperoni.  Put in a bowl and toss.

Once the tortellini cools, add to the bowl and toss some more.  Use your fave italian dressing.  I use about half a bottle at first.  Before you serve it, stir it up and add additional dressing if necessary.  That’s it.  Takes about 15 total minutes to make!

Fatty Fat Sausage Alfredo Casserole
I’m making this recipe mainly for my hubby who is a UPS driver and burns LOTS of calories all day long and is a skinny mini! I do plan to have a small plate, but will fill my plate mostly with salad and green beans tonight.
Sausage (we like the hot)
Jarred alfredo sauce
Chicken/mozzarella raviolis from CostCo (could use plain cheese)
1/2 bag cheese tortellinis leftover from pasta salad
1 bag mozzarella/provolone blend shredded cheese (use whatever flavor you like)
Take the casing off the sausage and cook it up.  I do not pre-cook the tortellini or the raviolis for this dish since it is going in the oven.
Layer the pockets of goodness into the baking dish.  When the sausage is done, use a slotted spoon to remove from grease and layer it.  Layer the alfredo sauce over the top and then cover with cheese.  Healthy right????  Cook in a 350 degree oven until bubbly and cheese is lightly browned.  MMMMMMMMMMM fatty fat goodness.

    Courtney,
    those pasta salads are amazing….lately I have just been throwing my pastas over a bed of lettuce and having a complete meal…love your editorials…
